The Wiener Schnitzel has long since transcended Austria's borders and has become an international ambassador for Austrian cuisine. In many parts of the world, attempts are made to recreate the authentic Wiener Schnitzel, but true (Schnitzel) lovers know that the secret lies not only in the ingredients or the preparation, but also in the tradition.

Not every schnitzel can simply be called a Wiener schnitzel: When Wiener Schnitzel is mentioned on the menu, it refers to a veal schnitzel that is fried in clarified butter. Before breading, the meat is pounded wafer-thin and seasoned until it is then dipped in flour, egg and finally breadcrumbs (the schnitzel is not pressed into the breadcrumbs, it is simply turned in them 1-2 times). This creates this beautiful wavy, golden breading when baked, which is also known as souffling.

What is also very important to us personally is the quality of the food we use in our restaurant & hotel. True to the motto: "The best comes from our own family!", we source all our meat and sausage products from our family-owned butcher's shop, Schultes. This is an important basis for regional enjoyment, high-quality products and the best local specialties.
